This week we are excited to share about Revolve True Food & Wine Bar located in downtown Bothell. Our team has frequented this restaurant a handful of times during lunch. This couldn’t come at a better time since Seattle Restaurant Week is in the midst! Revolve’s Owner, Dr. Dusty DuBois, shares her story with us:
I’ve been a chiropractor in Bothell for 20 years and about 8 years ago I embarked on a weight loss journey called Ideal Protein at Bothell Ideal Weight-Loss. I lost 70 lbs in 7 months and I just craved more information about this process. I had previously dieted and exercised my way to 217 lbs, and just changing the way I ate is what caused the weight loss. I was shocked that it was that easy. So I researched everything I could about food and how it either contributes or degrades our health. Everything kept pointing me to a low carb, grain free lifestyle to support my health goals.
After learning what I believe to be the truth, I found it difficult if not impossible to find restaurants that would cater to my new way of eating – so I decided if a place like that was to exist it was up to me to create it. That was a terrifying thought, as no part of me ever entertained the idea of opening a restaurant, but I was “called” to do it. 3 ½ years later Revolve opened for business.
I wouldn’t call myself passionate – more like “pissionate”, which means I’m pissed off and passionate. I’m pissed off at all the lies that we’ve been fed at the cost of our health all for profit. I’m passionate about “feeding” people the truth and have it taste amazing!!
Revolve Food & Wine is a reflection of my passion for wellness, wonderful food and good wine. All menu items are free of gluten, grains, MSG, preservatives, trans fats, refined or cane sugar, emulsifiers, GMO and soy. Revolve serves only animal proteins that are natural and raised humanely, without the use of antibiotics and added hormones. Diners enjoy wild seafood, organic farm fresh eggs and seasonal organic produce, as well. Guests love the lively, classy wine bar, or, if a quieter experience is preferred, dining in the wine cellar.
What do you love the most about what you do?
Eating the food we make. On a deeper level; I love creating NEW things/businesses and the challenges that come from that. Everything I do is congruent with my belief system about health so investing in myself is the greatest ROI I’ve ever had. To date; the MOST challenging thing I ever created was Revolve!!
Where do you find inspiration and motivation?
This is a tough question and one I get a lot, because I am highly motivated. The answer is I think I was born with it. I’m naturally motivated and love to excel at anything I do. I read a lot of books about health, business, leadership, and inspiring stories. It’s quite possibly where a lot of my ideas and inspiration come from.
Do you have a mentor in business or life?
I’ve had a few mentor’s that altered the course of my life. An owner of an aerobics studio who let me clean her studio in return I could take the classes, which lead me to teach aerobics for more than 20 years. My chiropractor who encouraged me to go to Chiropractic school and then I worked for him for 10 years.
